BASIL SWEET POTATOE CARROT QUICHE

Ingredients:

  • 1/2 cup (1 stick) Vegan Buttery Sticks
  • 2 cups chopped leeks, white and light green parts
  • 3 large garlic cloves, finely chopped or crushed, divided
  • 1 1/2 tablespoons lemon and pepper seasoning salt, divided
  • 6 ounce white mushrooms, sliced
  • 10 ounce baby spinach, slightly chopped
  • 6 ounce peeled and grated carrots
  • 6 ounce peeled and grated sweet potatoes
  • 5 tablespoons melted Vegan Buttery Sticks, divided
  • 1/3 cup almond milk
  • 1 tablespoon fresh lemon juice
  • 1 cup packed fresh basil leaves
  • 14 ounce firm tofu, drained, broken into pieces
  • 1/8 teaspoon crushed red chili pepper
  • 1 tablespoon arrowroot powder
  • 5 cherry or grape tomatoes, cut in half
  • 1 sprig of basil for garnish
  • Directions:

    Heat oven to 375 degrees F. In a large skillet heat ½ cup Vegan Buttery Sticks on medium. Add leeks, 2 crushed garlic cloves, and ½ teaspoon seasoning salt; cook 5 minutes, stirring occasionally. Remove 1/3 cup cooked leeks and place in a large bowl; set aside. To the leeks in the skillet, add mushrooms, spinach, and 1 ½ teaspoons seasoning salt; cook 4 minutes over medium heat.Combine the cooked leeks, in the reserved bowl, with carrots, sweet potatoes, 3 tablespoons Earth Balance® Vegan Buttery Sticks, and 1/2 teaspoon seasoning salt until well combined. Grease a 9-inch springform pan or quiche pan with the wrapper of the buttery sticks. Pat the carrot mixture on the bottom and up the sides of the pan. Set aside. In a blender, blend almond milk, lemon juice, and 2 tablespoons melted Vegan Buttery Sticks until smooth. Add basil, 1 chopped garlic clove, tofu, ½ teaspoon seasoning salt blend, and crushed red pepper until pureed. Pour puree into the skillet, with heat source turned off, and mix with mushroom mixture and arrowroot powder until well combined. Spoon into the springform pan. Smooth top with spoon and decorate with sliced tomatoes. Bake 55 minutes; cover with foil if browning too much the last 10 minutes. Cool 15 minutes before removing from pan. Place a sprig of basil in the center and serve warm or at room temperature. Serves 8.
